In 1970
Howie Wolf bought the store from his father in law and
in 1971 started making sausage. His son Gregg Wolf
worked along side him and in 1980 bought the store and continues to
make the sausage. Eustis, which was settled by German
immigrants in 1886 is now known as the sausage capital
of Nebraska. Almost every family in Eustis had their own
smoke house and made sausage. And even today, the family
tradition of sausage making is still alive and well in
Eustis. Gregg still keeps the family traditions going.
He still uses the traditional stone crocks to cure the
meat before grinding and gives them a cold smoke in a
handmade smoker which he fills with hickory, maple and
mulberry wood chips. This is stick-to-your-ribs sausage!
Lean and smoky and packed with enough spice that merely
